At An Choi, the Vietnamese street-food hot spot that Bui owns with his brother, Huy, and the photographer Sebastian Kim on the Lower East Side scarpe nike, Bui plays many roles: meeting with vendors scarpe nike, entertaining clients, waiting tables, making frequent trips to Chinatown for supplies and working in the kitchen. The best outfit for such a varied routine? Dropped crotch pants for comfort, dark colors to conceal spills and shoes with rubber soles. “It’s a physical job so what I wear needs to meet those demands,” he says. “Having one style or uniform is the most practical way.” Here, an unstructured knit blazer is as durable and easy to move in as a sweater, but transitions smoothly into socializing with the stylists, models and pho fanatics who come in for dinner, too.
For the first installment of a new series on occupational uniforms, T visited with the restaurateur and occasional Madame Wong’s party host Tuan Bui to see how he dresses for work every day.
